About This Position
The Food & Beverage Purchasing Agent is responsible for ensuring the accurate, timely, and most cost-effective purchase of North Forty Lodging Food & Beverage supplies/goods. Strict adherence to established policies, procedures, and controls will be critical. Essential functions of purchasing include:
Responsible for the execution of all duties necessary to ensure safe and efficient operations of the Food & Beverage purchasing and receiving department.
Must ensure strict adherence to established policies, procedures, and controls.
Works directly with all F&B outlets to source the best products available for the best price.
Works directly with all F&B outlets to source the best vendors available for the needs of the outlet.
Responsible for the handling of all F&B vendor-related credits and quality control issues.
Responsible to ensure the appropriate F&B purchase requisitions, approvals and purchase orders are issued prior to placing orders and purchasing.
Ensure appropriate receiving documentation for F&B orders is reviewed, signed and forwarded to Accounting
Receives F&B orders from loading dock, Kitchen hallway, and Brookside and stocks appropriate F&B storage areas, refrigerators, etc..
Work with F&B Department Managers to Maintain Par Levels.
Assists as needed with monthly F&B inventories.
Works to control F&B product cost in alignment with desired quality.
Adheres to key control policy and procedures according to Alderbrook Resort and Spa guidelines; requests additional information and guidance from Controller as appropriate.
Ensures proper organization and storage of all product.
Follows HACCP and Health Department procedures per Alderbrook Resort and Spa guidelines.
Ensures walkways and hallways are not used for product storage to infringe upon statutory safety guidelines.
Other duties as assigned.
Essential culinary functions include:
Coordinate all food orders between stations and food servers.
Presentation and portioning of food for all banquet functions.
Adhere to policies and procedures regarding sanitation and sanitary food handling.
Maintains the work area, including all counter tops, utensils, equipment, and refrigeration in a clean and sanitary condition in accordance with state, county, and company health regulations and safety regulations.
Have thorough knowledge of menus and the preparation required, according to hotel standards.
Maintain cleanliness and organization of all storage areas.
Prepare and display buffet food items according to the hotel standards.
Proficiency in the following cooking techniques: charbroiling, poaching, deep-frying, sauté, braising, roasting and par-cooking.
Recognize quality standards in fresh vegetables, fish, dairy, and meat products.
Knowledge of herbs and spices and proper use of each.
Maintain clean and sanitary environment with knowledge of proper food handling, storage, and sanitation.
Prepare food for Banquets, as required, following specifications on Banquet Event Orders “BEO’s”.
Prepare all foods following hotel standard recipes. Preparation of specials will be under the direction of the Chef Team.
Breakdown buffets and plated meals, storing food and equipment properly at the end of each meal period.
Work banquet food station as scheduled by the Chef Team.
Know the location and operation of all fire extinguishing equipment.
Practice safe work habits at all times to avoid possible injury to self or other employees.
Be able to support any position in the Kitchen that is in need of help.
Requirements:
Qualifications
3-5 years previous hotel Food & Beverage experience, required.
3-5 years experience as a Cook in a commercial kitchen.
High school diploma or equivalent required, Bachelor’s preferred.
Strong computer and Excel skills, required.
Valid WA Food Worker Card required within 14 days of hire.
